I LOVE CABBAGE! In all it's various incarnations...I LOVE CABBAGE!
So...let's talk greens. Okay...here is a quick an easy way to make about three days worth of my leafy friends.
Cut up the cabbage into long-ish strips. Throw in a roasting pan or on a baking sheet. Add salt, pepper and a slim coating of fresh grated nutmeg. Throw on 1-2 TEASPOONS of olive oil and bake for 20 minutes at 400 degrees. Then at the very end...just broil it off to get a tiny golden singe on a few of the ends.
OR
Take a red cabbage and cut it to smithereens! Soak it in rice wine vinegar, a hint of salt and a good amount of pepper and you have a perfect side to a piece of grilled chicken, baked fish or grilled shrimp!
